Santoku knife, Aogami 2 Carbon steel with Watetsu cladding, Kasumi finish, honwarikomi construction - Miyazaki
SHAPE: Santoku. Named after the three best things to do with this knife - slicing, dicing and mincing. It is the classic veg prep knife with both good breadth and width.
STEEL: Aogami (blue paper) 2 steel. This is very similar to white paper steel but with tungsten and chromium added to it which helps with edge retention and slows down rusting. This steel differs from Blue 1 in its carbon content, Blue 2 being slightly less. Due to the non stainless nature of this steel care must be taken to dry the knives properly after use.
The core is cladded in Watetsu - a low carbon steel, byproduct of tamahagane production.
FINISH: Traditional Kasumi polished finish. Kasumi roughly translates to “mist” or “cloud” and refers to the hazy appearance of the soft steel/iron cladding, in contrast to the fine polished cutting edge. This elegant finish is very common on traditional style Japanese blades.
HANDLE: Octagonal red sandalwood with white buffalo horn ferule and end cap, with three silver spacers
LENGTH: 168mm
MAKER: Haruki Miyazaki, Goto Islands, Nagasaki prefecture
SAUNDERS SAYS: "These one of a kind knives by Miyazaki-san are absolutely amazing. We have all got our eye on the petty he has done. Very sexy"
