Kiritsuke Gyuto knife, Aogami 2 with wrought iron cladding - Nigara
Nigara Hamono has an excellent reputation for creating one of a kind knives. We are very excited to be stocking these knives. In the words of me ‘they are well nice.’
This knife was forged at Nigara hamono then finished and sharpened by the young talent Naohito Myojin.
SHAPE: Kiritsuke gyuto. This is basically a Gyuto with a funky drop tip on it. Sometimes they can have a flatter profile more suited to slicing but generally they are very similar to Gyutos
STEEL: Aogami (blue paper) 2 steel. This is very similar to white paper steel but with tungsten and chromium added to it which helps with edge retention and slows down rusting. This steels differs from Blue 1 in its carbon content, Blue 2 being slightly less. Due to the non stainless nature of this steel care must be taken to dry the knives properly after use. This knife has then been clad In wrought iron.
FINISH: Polished
HANDLE: Octagonal stabilised and dyed maple handle.
LENGTH: 240mm in length.
